
This bacon is best paired with good food and uncompromising friends. This bacon is a tribute to Maurizio. I'm not sure that he will eat it on a regular basis since he tends to eat fresh salmon and avoid smoked meats, but he absolutely hates American "burnt" coffee. So when I made this recipe I was sure to use a really good Italian roast and glaze it with a fine ristretto espresso.
