Old Fashioned – Bourbon Bacon
Until recently I never really cared that much for Bourbon. But on a recent trip to New York City one of my great college friends of 30 years, Anne, took me to her favorite bartender in the city, at the Pierre. At first, I thought, what kind of person (“alcoholic”) has a “favorite” bartender. But then I met him, Paul Robert Johnson. Wow, he was amazing. An artist more than a bartender. He was capable of matching my mood and attitude to the perfect drink(s). Many drinks that had no name (as far as I can remember). You need to go meet him if you have the chance or follow him on Instagram.
Anyway, even though I didn’t have an old fashioned that night, I had so many other amazing drinks that I was inspired to try a couple of classics as long as they were made by a really good bartender. So I tried an Old Fashioned. And I loved it.
Flash forward several months, when I started experimenting with new bacon recipes I found a highly recommended bourbon bacon recipe online. I was so excited to try it, so after waiting 8 days to cure, smoke, cook and rest I finally tried it. It was HORRIBLE. I was so sad (Don’t worry I ended up making a really good bacon chilli out of it).
So I decided to go with my gut and replicate the Old Fashioned cocktail from NYC and turn it into a lovely bacon. And 2 weeks later my new batch was ready and it was REALLY good. And then I made it better by adding a bourbon reduction glaze.
So if you think life is just a bit better with a great cocktail, especially a good bourbon, then this is the bacon choice for you. If ever there was a bacon that was meant for after dark this would be it. Make this your guilty pleasure.
