Cracked Pepper Bacon

To me, there is nothing like fresh cracked peppercorns when you want to enhance the flavor of just about any savory dish. My problem with most pepper bacon is that it is often ground pepper that overpowers the bacon. Yuck!

So when we made this we did our best to strike a perfect balance.  Lovely savory bacon with a lingering fresh cracked pepper bite. In my mind, this would be the height of luxury in pioneer times.

If you don't love this pepper bacon then you may need to rethink the choices in your life that got you here.  Maybe seek out a professional therapist, look to a spiritual healer or perhaps find a good shaman, since this is just plain awesome. Savory Nirvana.

Bacon Al Pastor

I am surprised that Al Pastor isn't illegal.  This is one of my favorite tacos that I first tried on a trip to Guadalajara Mexico.  Since that first taste 14 years ago, our friends bring (smuggle) bags of this magical meat, plus handmade tortillas, whenever they come to visit us.

So it is only natural that we found a way to turn this "ancient" Mexican treat into our latest bacon flavor.  Is this a taco you ask?  Well, that is up to you.  For now, it is just our favorite flavor when we make bacon sliders or as a side when we make Huevos Rancheros.

Celebrate life and family the way Mexicans do: with family, music and your favorite foods including this new delicious addition.

Old Fashioned - Bourbon Bacon

Until recently I never really cared that much for Bourbon.  But on a recent trip to New York City one of my great college friends of 30 years, Anne, took me to her favorite bartender in the city, at the Pierre.  At first, I thought, what kind of person ("alcoholic") has a "favorite" bartender.  But then I met him, Paul Robert Johnson.  Wow, he was amazing.  An artist more than a bartender. He was capable of matching my mood and attitude to the perfect drink(s). Many drinks that had no name (as far as I can remember). You need to go meet him if you have the chance or follow him on Instagram.

Anyway, even though I didn't have an old fashioned that night, I had so many other amazing drinks that I was inspired to try a couple of classics as long as they were made by a really good bartender.  So I tried an Old Fashioned.  And I loved it.

Flash forward several months, when I started experimenting with new bacon recipes I found a highly recommended bourbon bacon recipe online.  I was so excited to try it, so after waiting 8 days to cure, smoke, cook and rest I finally tried it.  It was HORRIBLE.  I was so sad (Don't worry I ended up making a really good bacon chilli out of it).

So I decided to go with my gut and replicate the Old Fashioned cocktail from NYC and turn it into a lovely bacon.  And 2 weeks later my new batch was ready and it was REALLY good. And then I made it better by adding a bourbon reduction glaze.

So if you think life is just a bit better with a great cocktail, especially a good bourbon, then this is the bacon choice for you.  If ever there was a bacon that was meant for after dark this would be it.  Make this your guilty pleasure.

Orange Marmalade Bacon

Our orange marmelade bacon pairs perfectly with English muffins, waffles, pancakes, eggs, more bacon, orange juice, and Grand Marnier (after 10 am please).

Everybody loves Paddington, right?  Except maybe Hugh Grant's character (Phoenix Buchanan) in Paddington 2. And Paddington's favorite thing in the world is orange marmalade.  Now take these two great things and swap out the bear for a pig...and you get friendly delicious perfection.  Or just darn good bacon. We love this stuff.

Breakfast is just better when combined with delicious homemade marmalade (and it is surprisingly easy to make see our post here).  Not too sweet, not too salty, just right.  Goldilocks would love this stuff, but that is a different bear story.

Are we sold out? Our Apple Pie Bacon is great too.
